Curried Mutton

Curried Mutton

(serves 4-6)


Ingredients

  • 100g pack of SEASONED Curried Blend
  • 2 kg Mutton leg/shoulder on the bone.
  • 1 small red onion
  • ½ red bell pepper
  • ½ yellow pepper
  • 1 sweet potatoe cubed into (optional)
  • Fresh thyme (4 pcs)
  • Pimento seeds (optional)
  • 4 fresh bay leaves
  • ¼ - ½ scotch bonnet pepper.
  • 200 - 400ml cold water (usually 300ml)

Method

  1. Marinade the mutton with SEASONED Curried Blend
  2. Thinly slice the onion & peppers.
  3. Add fresh produce (except sweet potato) to the mutton and stir well
  4. Put mutton & fresh produce in a pot & pour in the water.
  5. Quickly bring to the boil then simmer for approximately 1.5 - 2 hours (do not allow water to evaporate)
  6. 15/20 mins before end of cook add sweet potato
  7. Meat should be tender but still on the bone.

Serve with rice and peas or with boiled yam, green bananas and cornmeal dumplings.
